A question about "this kind of look"..

The lighting is a major factor - the way it comes from the side emphasises the texture & 3 dimensionality.
I suspect they've altered the local contrast somehow too, maybe the clarity slider in ACR / LR. It's possible they've dodged and burned by hand but I doubt it.
I think the blurry background has been made blurrier in post rather than being solely due to DoF; that makes the flowers stand out even more.
 
Thanks Simon, I was thinking dodge and burn, not that I know anything in the least about it, but i know it makes for a smoother appearance..
