Thanks for the advice guys. Always useful to hear how other people do things. I think for now i'll start off with a single external hdd for regular backups and then upload finished jpegs online. I'll then look to get an second hdd to keep off site at a later date.
Ok, so i've been taking pictures for a year or so now and whilst i don't have loads there's a lot that i don't want to lose. So far i've just been backing up the most important ones onto a DVD-RW, but want something that will handle much larger volumes going forward.

Assuming you're stationary and capturing the subjects in the same place it might be worth having a play with manual focus too, and with the high burst rate of the 60D you should get a few keepers.
A lot will depend on how much you want to carry with you and whether you want to be changing lenses much. I have a holiday planned later this year and am currently looking for an all round lens as i'd prefer to just take the one. I'm currently thinking of the 17-55mm 2.8 or the 15-85mm...
I know it was already mentioned, but given you have a FF i'd definitely consider the 85mm 1.8, it's no more expensive than the sigma 50mm and more suited to portraits IMHO
I recently upgraded from a 450D to a 60D with pretty much the same set of requirements as yourself. I've been very pleased with it so far, though haven't used the video function in anger yet.
The higher ISO ability it what i've really noticed so far, obivously it can get quite noisy higher...

I use the 85mm 1.8 for portraits, and for outdoors i think the 85mm should be all the extra you need on top of the 17-55 2.8 which should cover most other scenarios. I've been really pleased with it so far.
I'd be interested to hear how you get on with the 17-55 2.8 if that's what you go for. I've got the 60D with just the 50mm 1.4 and 85mm 1.8 primes at the moment and have been looking at various options for standard zooms.

I've not used the 1000D but have read some very good reviews and it should offer more than enough as an entry level DSLR. The price sounds reasonable, but it's worth checking the usual 2nd hand sites (ebay, gumtree etc) to see what they're going for.
It amazes me when reading reviews on lenses how many people seem to have issues with them.. Is quality control really that much of an issue with the manufacturers? When spending £££'s the least I expect is for the product to work correctly.
