    You could also convert to B&W and just have the stained glass windows colour.

    DxO Optics or Lightroom?

    You can download trial versions for both. I'd suggest download both and see which you prefer in terms of usability and output. I tried LR, DXO, Capture One & NX2. Settled on LR and very happy with it.

    Where in South Devon to shoot

    I've just come back from Lyme Regis. Plenty on good shooting there and I also recommend Sidmouth which isn't far away.
