There's a guy i know from Flickr. He's takes some amazing photo's. He's grown from scratch some lovely lighting skills using your common and garden speedlites and some cheap ebay umbrellas.
He's just started a series on his blog giving tips and tricks about his shoots.... they are well worth...
Do a google for Zone Metering. You'll find some charts for 5 different percentages of grey. Read up about the different shades and how exposure compensation can affect your exposure.

I'd second Understanding Exposure, everything clicked after reading that.
Another book i've found invaluable is Exposure by Chris Weston. Lots of great info about spot metering for 18% grey which has really made a great impact on my photos.
