Having owned a FF for a number of years, I used to think like that! There's no regrets with getting a mirrorless crop camera and with the correct lenses you can do exactly the same as with a FF. And some things you can do better than a FF.

Why would you want to downgrade for product photography? I see no mention of lighting equipment in your signature, which is where I'd be looking if I wanted to go into product photography seriously.

I considered an R10 when I was procrastinating about mirrorless. However I wanted the faster shutter on the R7 and then you don't have to go through a menu to change manual to auto focus when using RFs lenses on the camera.

When doing the occasional long exposure with a dSLR, I just cup my hand close to the viewfinder, far easier than taking the eye cup off and using the small cover that fits on the viewfinder. Never had a problem with stray light using that technique.

Mine does not have the Dallmeyer lens, it has the Wray lens which is f/3.5 - it does however have the flash sync sockets. And has a case with a set of colour filters to fit the lens.
