Hahnemühle Photo Rag Baryta is fantastic for B&W, has a lovely textured look to it. I've found that once profiled Ilford Galerie Smooth Pearl is a nice paper on my B9180

I'd say go for a .6 & .9 soft plus the .9 hard. You can us the .6 soft stacked with the hard on a seascape if need be. I've the .03 .6 & .9 soft set but hardly used the .3
