If you want pocketable then it's an easy choice. The S95.
I wouldn't get too excited about the Leica, it's just a Panny underneath with a nice badge and different firmware.
I don't think there is any current phone that can touch the N8 as a camera, but unfortunately, as you've experienced, Symbian OS is a bit outdated and rubbish.
I've given up on Nokia after many years and now moved onto Android. Android is a great OS but the cameras are rubbish and the battery...
Watch out for security, they love inspecting your gear.
Last time I flew I had to get all my lenses out of their cases and watch my DSLR get swabbed for explosives.
I would recommend a small backpack for your camera gear.
For a long lens such as the 70-200 I would always go with the IS version.
IS isn't perfect and if you have shaky hands you will still get the odd blurred shot, but it's a decent safety net and allows much lower shutter speeds.
Wordpress does take a bit of time to find your way around and get the hang of how things work.
I would suggest you to go to Themes, (WP-control panel-appearance-themes-install) then click on "photoblogging" and search for a photo ready theme. Autofocus is a decent theme to play around with...

For camera prices I would look at camerpricebuster, pricerunner and amazon.
My first digital camera was a Fuji MX1200 with a 1.3mpx sensor, around about 2000.
When I look back at the photos it took they were awful. My current phone(n95) takes much better pics.
