Check out http://www.seabird.org/boat-trips.asp It tells you how to go on their photography trips. Edinburgh Gary is right about the scene there and it really stinks but would be great for photography. Hope it works out for you.

You used to be able to get a boat which ran from N. berwick harbour and they'd drop you off for acouple of hours then pick you up but they stopped doing this a couple of years ago. Not sure if they've started letting you get off again.
